POTATO PUMPKIN SOUP (Digestion & Lymphatic System)
Ingredients:
1 large butternut squash, peeled and chopped 4 potatoes, peeled and chopped
3 carrots, chopped
2 leeks, sliced 2 celery stalks, chopped
4 cups water or vegetable broth
Instructions:
Add all ingredients to a large pot and simmer for 25 minutes until vegetables are tender. Blend half for a chunkier texture or blend fully for a creamy consistency. If you prefer a thicker soup, remove some cooking water before blending. Serve hot and enjoy!
